When to leave a spice whole and when to crush it

Whole seeds keep their aroma longer, while fresh crushing moves it into the dish faster.

Briefly toast fennel and coriander before crushing them for bread or vegetables. Leave mustard seed whole in pickles and crush it for sauce; always count juniper and use only a few berries.

Do not grind the whole pack in advance. A small amount in a mortar or beneath the flat of a knife is enough for one meal and leaves the rest sealed.
