How to inspect dried leaves before cooking

Colour, intact leaves and the amount of stem tell you more than decorative packaging.

Open the pack over a pale surface. Sage and bay should show whole leaves; small flowers can remain among oregano and savory, while firm stem pieces should be removed before serving.

Keep herbs away from steam and light. Whole leaves are easier to remove from a pot; if you want to scatter them through a dish, crush only the amount you will use immediately.
